content1.5 lbs Halibut Filets
Salt & Pepper as needed
Flour as needed for dusting
2 Tablespoons cooking oil (peanut, safflower or sesame work well)
1 bunch green onions, minced, reserving some for garnish
½ cup or to taste (can be found in Asian section Lee Kum Kee brand is also called Ma Po sauce

Cut the halibut into large chunks or into four 6-oz fillets.  Pat the fish dry and lightly salt and pepper.  Dredge the pieces of fish lightly in flour.  Heat the oil in a frying pan on medium high heat.  Place the fish in the pan and cook for 3-4 minutes on each side if cooking fillets.  Smaller pieces will take less time.  Add in the green onions reserving ¼ cup for garnish.  Pour the sauce over the fish and continue to cook for 1-2 minutes.  The center of the fish should look opaque.  Garnish with additional green ions and serve immediately.  The halibut can be substituted with other white fish.  This dish is excellent over rice.
