Recipe NameOven Broiled Salmon with Soy Glaze
DescriptionServes 4 by Greg Atkinson
contentIngredients:

4 - 6 oz wild salmon fillet
2 tbsp soy sauce
2 tbsp brown sugar

1. Preheat the broiler in your oven and set a rack about 6 inches from teh heating element. Line the bottom drip pan of a 2 piece broiler pan with parchment paper to catch any drips and spray the top half of the pan with non-stick spray, or rub it with canola oil.

2. Rinse the salmon fillets, pat them dry and place them skinned-side-down on the oiled pan.

3. Put the salmon under the pre-heated broiler and leave the door of the oven open so the broiler will stay on. Roast until a pale brown crust has formed on the surface of the fish, about 7 minutes.

4. While the fish is broiling, mix the soy and brown sugar  and when the salmon has begun to brown, brush it with the soy mixture. Put it back in the oven, turn off the broiler, and close the oven door. Allow the salmon to roast in the residual heat of the closed oven for another 5 to 7 minutes and serve.
