2 firm fish fillets or steaks (5-6 ounces each)
1 - 2 cups of cooked rice
2 cups of coarsely chopped bok choy or greens
2 scallions chopped
1 Tablespoon of oil
1 teaspoon of grated fresh ginger root
1 or 2 garlic cloves, crushed
2 Tablespoons of soy sauce<br>2 Tablespoons of dark or toasted sesame oil chili oil (optional)
Preheat oven to 450 degrees. Take two sheets of aluminum foil or parchment paper, 12 X 24 inches, and fold each sheet over to make a double thickness square. Brush a little oil on the center of each one. Rinse the fish and prepare all of the ingredients.
Spread half of the rice on the center of each foil square and then layer the greens, fish, and scallions.
In a small bowl, mix together the oil, ginger root, soy sauce, garlic, sesame oil, and chili oil if using. Pour half the sauce over each serving.
Fold the foil into airtight packets. Bake for twenty minutes. Carefully open a packet and check that the fish is done. Beware of steam! To serve, carefully open the foil and transfer the contents to plates or bowls. * I like to make a little more sauce for my packets! * |
