contentFrom the Greeks – I don’t have a recipe that gives actual quantities and times because in my family it has never been written down. The reality is quantities are up to the cook and time is up to the fish.

PLAKI

The best fish to use is black cod, however, sea bass and halibut work well also.

Ingredients

Fish, preferably black cod steaks, but sea bass, halibut steaks or fillets can be substituted.
Fresh, ripe tomatoes – chopped – enough to cover the pan twice
Green Onions – chopped – use the whole onion – enough to cover the pan twice
Basil – dried or fresh – if fresh, chopped, not whole leaves
Olive Oil
Salt
Pepper

Pre-heat oven to 350 degrees

Lightly oil the bottom of a flat pan large enough to hold the fish. Cover the pan bottom with chopped tomatoes. Then cover the tomatoes with a layer of chopped onions.Drizzle olive oil on the layers. Sprinkle salt, pepper and basil over the layers.

Place the fish on top of the vegetables, skin side down if there is skin, then drizzle olive oil on the fish. Sprinkle salt, pepper and basil on the fish.

Repeat with a layer of tomato and then a layer of onion over the fish. Drizzle olive oil on the layers.Sprinkle salt, pepper and basil on the fish.

Put in oven, uncovered, for about 20-30 minutes/pound of the fish.  Cooking time varies with the type of fish used.  Take a fork and flake the fish open a bit to make sure it is done.  Because the fish is covered with vegetables, but not being poached, it takes longer to bake than it would if you were just baking it outright, uncovered.
