| content | As a family of salmon lovers, we like to keep it simple.
Here is the family recipe:
On the barbecue:
1. Take heavy duty foil and put a side of salmon (or whatever size piece you are cooking) on the foil. Bend the foil up so that it makes a tray for the salmon to lie on.
2. On the stove, melt about 1/2 cup of lemon juice and two-three Tablespoons of butter or margarine.
3. Pour the melted lemon butter over the salmon. The tray foil should keep the juice close to the salmon.
4. Place the whole foil tray with the salmon and butter/lemon on the barbecue. If the barbecue has a lid, use it. If there is no lid, make a lid out of foil to place over the salmon.
5. Cook just until the meat will separate with a fork.
6. Optional: Sliced onions (Walla walla or any other) can be layered on top of the salmon while cooking.
Salmon dill sauce:
Mayonnaise, lemon juice, and dill weed (dry). Mix mayo and lemon juice to desired consistency (we vote for not too runny). Add dill weed to desired taste.
If the barbecue seems like a pain, I cook it in the oven. 350 degrees, in a glass baking dish, skin side down - a little olive oil makes the skin not stick. Same lemon/butter sauce as above. Cover the pan with foil while cooking. |
