| Recipe Name | Halibut with Strawberry-Mint Salsa |

| content | 2 cups diced strawberries, about 12 oz.
1/4 cup chopped red Spanish onion
2 tablespoons fresh lime juice
1/4 cup pureed passion fruit, or 2 tablespoons orange juice
2 tablespoons chopped fresh mint
4 slices halibut fillet, 5 oz each slice, skinned
Olive oil for rubbing fish
Salt and freshly ground pepper to taste
Fresh mint sprigs for garnish
To make the salsa: Combine the strawberries, onion, lime
juice, passion fruit and mint in a non-aluminum bowl and marinate in the refrigerator for 1-2 hours.
Preheat an oven to 400 F. Rub each piece of the halibut with olive oil and lightly season with salt and pepper. Place the halibut on a baking sheet and roast until the flesh is opaque when cut with a small knife, about 6 minutes.
To serve, arrange the fish on plates. Spoon the salsa over the fish and garnish with mint sprigs. |
